Paleo/Gluten-Free Recipes: Chili

 

 

 

 

 

Dish Name:  Chili (paleo)

Prep Time:  10-30 minutes (how fast can you chop veggies?)

Cook Time:  20 minutes

Ingredients: 

Some fat (olive oil, bacon, etc.)              4-6 yellow squash/zucchini

 3-5 cloves of garlic                                 2-3 large tomatoes

1 large onion                                          2 bell peppers

4 carrots                                                1-2 jalapenos

2 limes                                                   3T chili powder

4 stalks of celery                                    1 can tomato paste

1-2 pounds of cooked ground beef

 Instructions:

Chop vegetables and prepare to go in pan.  Heat your very large pan on medium/high with your fat of choice.  Don’t be shy with the fat.  Put in your garlic and onions and cook for 2 minutes. Add in the chili powder and stir to make a paste.  Add the celery and carrots and cook 2-3 minutes.  Add squash and cook 2-3 minutes.  Add peppers and jalapenos and cook 2-3 minutes.  Add tomatoes, tomato paste, lime juice, and ground beef and simmer until delicious.  If it seems too thick, add some chicken stock or tomato juice.
